Sweet & Sour Chicken

1 cup sugar
½ cup vinegar
½ cup pineapple juice
1/4 cup ketchup
1/4 cup soy sauce
4 boneless, skinless chicken breast
2 eggs, beaten
cornstarch
Mix sugar, vinegar, pineapple juice, ketchup, and soy sauce and bring to boil. Cut chicken in strips and dip in beaten egg and then cornstarch. Fry in oil until golden brown. Pour sauce over chicken. Serve with rice.
Weeknight Lasagna Toss
1 pound lean ground beef
3 cloves garlic, finely chopped
1 jar (26 oz) spaghetti sauce
1 2/3 cups water
1/4 cup Italian dressing
12 oven-ready lasagna noodles, broken into quarters
½ cup ricotta cheese
1 cup mozzarella cheese
Brown meat in large skillet. Drain. Add garlic, spaghetti sauce, water, and dressing. Bring to boil. Stir in noodles, reduce heat to medium low.
Cook, stirring occasionally, 10-15 minutes or until noodles are tender. Remove from heat. Stir in ricotta cheese. Sprinkle with cheese. Cover and let stand for 5 minutes or until cheese is melted.
Caramel Rice Krispie Treats
3 cups miniature marshmallows
15 caramels
1/4 cup butter
2 T. frozen orange juice concentrate
1 t. vanilla
4 cups rice krispie cereal
1 giant Symphony bar, broken in pieces
In large saucepan, combine marshmallows, caramels, butter, and orange juice concentrate. Cook over low heat, stirring frequently until melted and well blended. Remove from heat stir in vanilla. Add cereal and candy bar. Mix well.
Lightly butter a 13 x 9 inch pan. Lightly press into pan. Let cool completely and cut into bars.

So glad you posted that recipe of sweet and sour chicken! I made a version of it the other night and it wasn't any good. So I'll have to try yours out :o)
